F.A.Q.s

How do you cater for events?

Whether it be a wedding, corporate event or private party, we always serve our pizza’s buffet style. This allows us to provide you the most efficient service possible. We bring our wood fired oven trailer to your event and set up our branded Gazebo and once everything is set up, the oven is lit, allowing enough time to get up to the right temperature for cooking. We then cook the pizza fresh in front of you and your guests and serve each pizza cut into 8’s and serve on our pizza boards allowing your guests to help themselves. We replenish as required until we reach the number of pizzas you have ordered.

How do you cater for pop-ups and street food events?

When we host a pop-up or attend street food events, we sell all of our pizzas cooked to order and are sold individually priced. We decide beforehand which pizza flavours we will offer and usually include the classics along with some of our specials. We usually offer no more than 6 varieties for the event to keep our service as efficient as possible. All of our pop-ups are usually card/contactless payment only for ease of sale and hygiene reasons, but we do also take cash.

Can you cater for special Diets/children and people with allergies?

Yes, we’re more than happy to accommodate special requests and dietary requirements! Please inform us of any specific needs before the event, and we will take extra care on the day to cater to them. We commonly offer options for gluten-free, vegan, vegetarian, and halal-only pizza buffets.

However, please note that our prep kitchen and cooking surfaces are not completely free from allergens. Therefore, any serious allergy-related requests must be discussed in detail in advance, and in some cases, although we take great care, we may not be able to guarantee complete allergen safety.

What happens during inclement weather?

Our professional Gazebo set-up allows us to operate even in the worst of British weather, but on some occasions in extremely bad weather or high winds, it may be necessary to move the serving area indoors. We will still cook the Pizza in our wood fired oven outdoors, but may need access to a serving space indoors. If an event had to be cancelled due to serious weather issues, we would work with you to reschedule the event at our next mutual convenience. We will discuss this contingency on an event by event basis with each client as each venue/location is different.

What areas do you serve?

We are based in Derby and serve Derbyshire, Nottinghamshire, Leicestershire, Lincolnshire and the surrounding areas, usually within approximately 50 miles from our base, if you would like us to cater your event a little further afield, this may incur an additional charge, location dependent. Please contact us for a quote.

How long is your service window for events?

For most fixed events, around two hours of making and serving Pizza is long enough, however for larger events, a little more time may be needed. We will always agree your food service start and finish times ahead of the event and we are used to things sometimes changing and will always do our best to accommodate and always aim to be as flexible as we can.

How much food should we order?

We recommend that you order 1 pizza per person and should all not get eaten, we bring along plenty of Pizza boxes to allow the remainder to be taken away. We recommend 50g of Charcuterie/Antipasti per person and 50g of Pasta/Potato Salad per person and is usually ample. To reduce waste and unnecessary cost to our clients, we usually recommend how much of everything to order based on our experience but always with your agreement.

Can you offer bespoke Pizza flavours?

Absolutely yes! If you want something specific not on menu list, we can work with you to create your very own special wedding day/event pizza and even name it so it can be displayed on our menu board for the day. Quite popular with weddings, we can do a half and half pizza with brides favourite flavour on one half and the grooms favorite on the other. Get in touch to discuss your options.

What size are your Pizza’s?

All of our Pizza’s are hand stretched, live at your event. While we endeavour to make each a perfect round shape, sometimes they may not be so. We aim to make all of our Pizzas around 10-11 inches in diameter.

How much space does our set-up require?

We require around 3 meters width of access for our vehicle and trailer, but can squeeze through smaller spaces if necessary and our Gazebo and pizza trailer set-up requires a flat, dry footprint of 6 meters by 8 meters for safety reasons. In certain circumstances, we could reduce the footprint down if an onsite risk assessment deems it safe to do so.

How long does set-up/breakdown take?

We normally arrive two hours prior to your chosen service time to allow us enough time to set up our gazebo and fire our oven to the require temperature. the average event requires around two hours to produce and serve enough pizza to feed all of your guests. Breakdown of our equipment post-event can take up to two hours also. All in all, from the time we arrive until the time we leave, we usually allow a maximum of six hours.

Do you require access to mains power?

No! we are totally self sufficient, We don’t require access to power or water and we don’t use any noisy generators either.

Does your oven produce a lot of smoke?

On the initial lighting of our oven, sometimes we do have a little smoke and it’s perfectly normal. Once the oven is up to temperature, it burns very efficiently and there is hardly any smoke at this point. Windy weather can sometimes make this worse, but we always try to mitigate this when possible with oven positioning.

Do you provide serving plates, utensils and napkins?

For all events we provide recyclable/compostable paper plates and bowls along with paper napkins and compostable bamboo or wooden cutlery. All of our buffet serving equipment is fully cleanable and reusable reducing waste. We serve from our own branded draped buffet tables.

What happens if there is food left after an event?

Should there be any Pizza left or should we say, we still have uncooked dough balls and toppings left as your guests didn’t eat as much as expected, we are more than happy to cook and box up what is left as we always bring recyclable Pizza boxes with for just such a situation. We do however implement a product disclaimer at this point that needs to be signed by the client as we cannot be held liable for any food product once it has left our control. All Charcuterie/Antipasti grazing boards, Pasta salads and salad items will be disposed of and are not permitted for take away due to being high risk foods. Refer to our terms and conditions regarding food safety.

How many people can you cater for?

For all events types, we take bookings for minimum numbers of 100 guests, and although we can cater for smaller numbers, this minimum figure allows us to cover our costs. Our current set-up allows us to comfortably cater for up to 250 guests. Anything over this may require extended notice and potentially incur additional costs.

What style are your Pizza’s?

The dough and stretching style normally differentiate each type of Pizza and our regular style leans more towards the Neopolitan style without being strictly so. We don’t produce Pizza with enormous crusts (or Cornichone as it is known in the true Neopolitan style), but slightly smaller crusts while still retaining a light an airy texture. We also offer Pizza in the Romana Tonda Style which is the round Roman style, which is rolled thin, has no discernable crust, is more crispy and sauced all the way to the edge of the dough. We don’t however make both options for any single event due to the impracticalities of producing two different dough types at the same time, You can however, choose which style you would like for your event. Most opt for our Pizza in our more traditional Neopolitan style.

Do You offer more than Pizza?

We are by definition, a mobile catering company offering amazing wood fired Pizza. We do offer for events, a small range of accompaniments and upgrades, these can be found on our info page in the sample menu and are individually priced. We are not licensed to serve alcohol, although it does go very well with our pizza, but we can recommend companies that we work with that do.

Is your business is insured?

Yes! We run our business professionally and we pride ourselves on making sure that we satisfy all legal requirements in the running and operating of our company. Proof of all relevant documentation can be provided on request.
